In a bustling Paris neighborhood, Stéphane Louvard, a baker looking for a diversion, combined his time-tested croissant recipe with a few cookies for inspiration, creating what is now known as the “crookie.” This pastry mash-up, which involves putting cookie dough into a croissant and baking it again, has taken social media by storm after TikTok videos flaunted Louvard’s creations.

Louvard, who has been making his own croissants from scratch for decades, first came up with the idea for the crookie almost a year and a half ago. However, it wasn’t until recently that demand for his crookies exploded, with him selling 2,300 pastries in a single day at his bakery.

The crookie frenzy has not only spread across France but around the world, with other bakeries now offering their own versions of the pastry. Fusion baking has become more common in Paris and beyond, with bakers embracing trends like the brookie, cronut, and cruffin.

Despite its popularity, the crookie has its detractors, with some describing it as too oily, heavy, or “too American.” Additionally, the price of the crookie, at 5.90 euros for takeout and 7.10 euros to eat in, has also been a point of contention.

Nevertheless, Maison Louvard continues to sell about 1,000 crookies a day, with tourists and locals flocking to try the unique pastry. The crookie craze has even reached the five-star George V hotel in Paris, where a guest requested the original crookie for a late-night snack.

As the crookie continues to gain popularity, bakers hope that social media trends like this one will encourage more people to bake pastries themselves. While the crookie may be entertaining, the ultimate question remains: where to find the best croissant in Paris.
